Thanks for the pic Chad! My kids got a kick out of it (cept the 2 year old STILL claims it is a mouse!). It is cool to see things like this. I remember as a teen seeing a rare black squirrel. Wish I had a camera on me back then...these types of things come by every so often...

Recipe for said squirrel (or tree rat which ever term you prefer)

~ squirrels,cut into serving pieces, amount depends upon how many you can eat
~ olive oil
~ 1 large onion
~ 1 large green bell pepper
~ 2 cloves garlic
~ Cajun spice (Tony Chachere's recommended)
~ 2 tbsp Tabasco sauce
~ 4 tbsp ketchup
~ 1 tbsp Gumbo File seasoning
~ cooked rice

In a deep pot or dutch oven, heat some olive oil.

Season the squirrel on all sides with the Cajun seasoning. Add to the hot oil and turn to brown on all sides. Continue to cook until done.

Place the onion, bell pepper and garlic in a blender. Cover with water and chop. Add to the pot when squirrel is done.

Sprinkle the added vegetables with Cajun seasoning.

Add the Tabasco sauce, ketchup and the Gumbo File. Stir to mix well.

Serve over the cooked rice.

Enjoy.

Seriously tho...the albinos can be left alone...you can have the other ones..lol

Any animal can be prepared and eaten, the question is, how hungry would you have to be to do so?

A recipe for cat sure; from some fine Asian buds of mine.

BEER ROASTED CAT
1 cat cut into roast
1 can of Campbell's Cream of Mushroom soup
1 cube of beef bouillon
1 clove of garlic
1 Fine Irish Stout, a lot like a popular dark Irish BeerŪ

Cover and soak cat roast in salt water for 24 hours. Drain water and then cover and soak in beer for 6 hours. Drain and place in crock pot with your cans of soup. Add a clove of garlic, and a cube of beef bouillon. If you start to slow cook your cat in the morning with your George Foreman Cooker (or it's ilk), you'll have finely cooked feline in time for supper.

If a slow cooker is not available, a cat can be baked at 350 degrees for 2-3 hours in a conventional oven and still come out pretty good. Beer Roasted Cat is fantastic served with mashed potatoes, collard greens, and fresh, homemade egg rolls. When planning a full meal just remember- cat is a course best served hot!

Cat may not be the most glamorous, or tastiest of game meats, but with a little thought and preparation, Baked Cat can make the belly of the persnicketiest diner glow with home baked goodness.

I'd rather leave the cat lay dead.  I've seen crows have a hard time eating them.

Well as they say the only good cat is a dead one.  :rofl:

Anyways back to this albino squirrel.  What is it that some people are in awe of an albino animal whether it be a squirrel or deer, ect..?  After all it is nothing more than a genetic flaw.  I would shoot an albino animal and just treat it the same as I would their normal counterparts, after all I am out hunting for food.

I remember years back about a boy who shot an albino deer and some people went absolutely nuts that he killed it.  I am quite sure the meat tasted just fine.
